happy thanksgiving: a recipe and giveaway from cubit's organics

As I mentioned yesterday, today is the first feature post from the new series that I'm starting here on the Sadie blog. Rad Summer gets wrapped up in style next week and these feature posts will be taking over. Get ready to meet some amazing creators and bloggers!

A Thanksgiving Recipe from Cubit’s Organics: Roasted Carrots and Beets with Mint and Feta

The combination of sandy soil and full sun means that we are able to grow really nice root vegetables in our front yard here in Toronto. When we’re not growing for seed, we just grow all the different types and colours mixed up so what you pick is a surprise; A striped beet or a purple carrot? Who knows.

Our two year old daughter has taken to announcing that she needs a carrot and then heads to the front door to go get one from the garden. I can’t help but oblige and let her pick a few whether I was planning on having them for dinner or not.

This is really so easy that it hardly qualifies as a recipe but it’s simply too delicious to keep to myself. We bring carrots to my mother’s every year for Thanksgiving dinner and will continue the tradition this Sunday.

1. Send the two year old out into the yard to pick some different coloured carrots and beets. Going to the farmers market to get some heirloom root veggies will also suffice.

2. Preheat your oven to 425.
Wash your carrots and beets. I cut the greens off but leave a little at the top just because I think it looks good. I cut the really long tails off the beets because they will burn otherwise and then cut them all in half length wise.

3. Coat everything in olive oil, add a little salt. Then roast them in the oven at 425 for 40 minutes.

4. Let everything cool down for a few minutes, then crumble feta on to your veggies and add a hardy handful of mint leaves. Toss and serve out of your favorite vintage bowl. I think they look nice in this plaid one.

These are tasty when hot but are also great as a room temperature salad so no hurry to get everything done at the right time.

5. Give thanks for the vegetable gardens and the small children that tend to them.

I just wanted to thank everyone who's extended wishes of good luck and asked about my school project. I've completed the biggest and toughest phase of the project with a presentation called "substantials" (how daunting) last week and now I have two weeks to complete my work and pull it together for the final public presentation. A lot of people have been asking what I'm working on. Well, the short story is that I'm in the last weeks of my Masters of Landscape Architecture degree and my graduate project involves retrofitting a suburban neighbourhood to make it more walkable. The emphasis of my project is on improving biodiversity and human enjoyment of the landscape and that's all I'll bore you with for now. Perhaps I'll share an image or two of my design when this is all over, but for now I just wanted to thank everyone who's helped me out and made this easier.

On that note, the Sadie Etsy shop will be closed from Thursday, April 14 until May 5th to give me time to finish up my school work and get new summer Sadie pieces ready to share with you. I have some exciting things planned for this summer (in life and on the blog). In the meantime, stay tuned for some really awesome day in the life posts and more! I can't wait to ditch this winter-y banner for something brighter come May. Spring! Summer! The best time of year is just ahead of us. Two weeks, people, two weeks.

This week my friend Kait is running a new series on her blog (one of my favourites), Yuppie Love. Starting tomorrow six different bloggers/creative minds will be writing about their favourite cities in the world and sharing what I'm sure will be some amazing images, too. Check out Kait's post on Tuesday. She's sharing her love of Santa Monica/Venice Beach and I know that I for one would rather bet there right now. I guess for now we'll have to live vicariously through her lovely imagery and description. I have an exciting guest blogger series coming up here on the Sadie blog, too, but I'll wait a little while to share the details.

My post about my hometown and favourite place, Halifax, Nova Scotia, will be running on Saturday. I'll be sure to send you that way near the end of the week, too. Lately I've been loving crochet and filigree textures. I'm convinced I'm interested in crochet not just because of the flexibility of the medium, but because I'm also terrible at it. What might look simple to someone who can crochet looks like an impossible magic thread creation to me. These crochet pieces are among my Etsy favourites right now. And filigree? In jewelry, housewares, and vintage frames it has such a delicate and vintage feel. Again, it's a texture thing and I also think crochet and filigree evoke warmer temperatures and summery light. That said, it's so freezing in Vancouver that I practically need to be wearing gloves in my apartment while I write this and I could really use a big crocheted afghan right about now (I might choose THIS one).

I got really inspired by a lecture about design at school today and for the first time in a couple of weeks I can't wait to get back to work on my grad project.
